    Looking After Your Knives.
  • Wash Japanese knives by hand with warm water and mild dish soap immediately after use. Don't soak them in water or put them in the dishwasher, as this can dull the blade. Dry the knife thoroughly with a clean cloth to prevent water spots that can cause rust.

  • Sharpening
Hone your knife before or after each use to maintain a sharp edge. You can sharpen your knife with a whetstone, which is considered the best method. You can also use a leather strop to sharpen your knife and avoid chipping the edge.

  • Storing
Store your knife in a block, chef's case, or magnetic rack to keep it out of reach and protect it. If you use a knife block, make sure it's positioned horizontally to avoid unnecessary wear on the edge.

  • Rust prevention
Apply knife maintenance oil to the clean blade to prevent rust. You can also force a patina to form on the blade by rubbing it with something acidic, like vinegar, potatoes, lemons, or instant coffee. Cool tones like blue, grey, and black are good, but warm tones like orange and red can indicate rust.

  • Using
Avoid using your knife on surfaces that are harder than the knife, like granite, bamboo, or glass. Instead, use a cutting board made of end grain. Work in a forward or backward slicing motion, and avoid scraping food with the edge of the knife.
